That is an impressive transformation--but why? I have a terrible feeling that the "original" recipe for matzo-ball soup calls for little cubes of chicken fat (from the chicken soup the night before, perhaps).

I don't understand it; the first matzo balls I dropped in just fell apart, but the later ones mostly held together. But it tasted fine. I add the congealed goop from the top of the chicken broth I boil the balls in into the mixture. It's gross, but otherwise I'd just throw it out.
